I used an unroll and bake crust layered in the cooked onion cheeses real shredded parmesan and bacon pieces before pouring on the eggs as directed. Baked up perfectly and was so tasty I couldn't stop eating it. I plan to add other ingred's in the future - maybe some cooked mushrooms or sundried tomatoes!

Especially if you prefer to use only one quiche cheese at a time, Gruyere is an excellent as well as classic choice. A sweet, salty cheese, Gruyere becomes stronger the more it's aged. It also melts well and has the savory qualities to enhance rather than overpower the other quiche ingredients. If you can't get Gruyere quiche cheese, Emmental or Swiss can work well although they're a little stronger.

Muenster cheese is another traditional choice for quiche that can range from mild to strong depending on how it's aged. Other strong cheeses that can work deliciously well in quiche include blue or bleu, Parmesan, aged cheddar and Asiago. Asiago, cheddar and Parmesan together along with the milder mozzarella to even out the flavors can make a great cheese blend for quiche as well as other dishes.

Some cooks enjoy Parmesan sprinkled on the top for a quiche cheese that forms a cheesy crust. Individual egg and cheese quiche can be baked in pastry tart shells, muffin tins or hollowed out vegetables.

Make fillings from your favorite foods or from leftovers. Use a combination of cheese, meat, seafood or poultry and vegetables. Filling ingredients should be cooked, not raw. Pieces should be cut fairly small and drained well. No water bath needed. The pie crust protects the custard filling from direct oven heat, so a water bath is not necessary.

How to tell if the egg and cheese quiche is done. Baked custards should be removed from the oven before the center is completely set. The center will jiggle slightly when cup or dish is gently shaken. Overbaked custard may curdle. The knife test: Test for doneness with a thin-bladed knife.

Insert knife about 1 inch from the center of a one-dish custard; midway between center and edge of cups. If knife is clean when pulled out, the custard is done.
